Nourish—Gozleme with tend.ed

gozleme for 4 / ingredients -

270g plain flour

1/2 tsp baking powder

1/2 tsp dried yeast

1/2 cup warm water

Couple of pinches of salt

3 tbsp greek yoghurt

3tbsp olive oil 

Filling of choice 

Optional: serve with lemon/tooum 


  1. Combine warm water and dried yeast. Let it sit for 5 until it bubbles

  2. Combine all ingredients, apart from oil, with a wooden spoon until a dough forms

  3. Knead with hands for about 10 mins with extra flour dusting if required. It should be smooth

  4. Let rise for a least 30 mins

  5. Add olive oil and knead into it

  6. Let rise for another 30 mines

  7. Split into 4 balls - roll them out until as thin as you can (a little translucent)

  8. Whack some yum ingredients in the centre - I use silverbeet, feta, parsley and spring onion, all chopped up very finely.

  9. Fold her up - seal with water at joins

  10. Get a fry pan real hot with a splash of olive oil and fry until crispy and golden
